so.... just re-reading schomer's book and discovered that he does not recommend these machines for a busy espresso bar due to ergonomic concerns. is this machine hard on the baristas?

I was hoping Kevin would chime in on this one....when I asked a Gimme barista how she liked the Idro, the response was positive. She commented that it put her more in touch with the coffee.

It's hard on a barista if your counter is too high. You want the pressure you exert to be placed entirely on your bicep , tricep and shoulder muscles... your arm should be at a 90 degree angle (L-shaped) for the duration of the pull down. Since it's a CMA group, once the lever is down all the way, it locks down during preinfusion - which takes some strain off.

I certainly wouldn't want to use it at place that does 75lbs of coffee a day!

I am the owner of a espressobar called Espressofabriek in Amsterdam. We are working with a 3 group Idrocompresso and I can recommend it to everyone. It makes the beste espresso and workout you can imagine. When pulling 5 kg coffee a day it's a bit of a workout. Nevertheless it is the best espressomachine I can imagine and it makes making coffee a theatrical experience.
It looks great and it performes great.
